Coddies - Kim's 1st attempt

Ingredients
Bake Ahead
baking potato
baked
cod
baked or sous vide
Add to mix
milk
bread crumbs
Dijon mustard
salt
onion
grated
Old Bay seasoning
Add after tasting
egg
Used for coating cakes
bread crumbs or panko
Instructions
Preheat oven to 450 degrees
Bake potato and cod.
Scoop out the potato into a mixing bowl, and break up cod into same bowl. Add ingredients in "Add to mix" section. Mix well.
Taste this mixer and adjust if needed.
Add the egg and mix well to bind the mixture together.
Divide into equal sized cakes, and dredge in bread crumbs or panko. Place on oiled foil or parchment paper covered baking sheet.
Bake until 165 degrees and golden brown. Broil if neccessary for browning.
Notes
Serve with crackers and mustard or topped with hollandaise sauce. You could also try tarter or seafood sauce.
